Simmonet-Febvre is a highly-regarded producer based in Chablis, Burgundy since 1840. This is a 100% Chardonnay Blanc de Blancs which has been made in the traditional (Champagne) method. Aged on fine yeast lees for 9 months, the nose is delicate and intense with ripe fruit aromas and white florals. The palate is complex with citrus, brioche and biscuity notes. The finish, with a 6g/L dosage, is dry, intense and salivating.
Grown on clay and limestone soils from vineyards across Burgundy.
