A delicious Pet Nat (or, in Italian, Col Fondo), made from the Garganega grape (most recognisable as Soave).

Cloudy in appearance, crisp, crunchy, with refreshing green apple, intense minerality and a hint of spice.

Refermentation in bottle is started with the must of Garganega, which provides complexity and richness. Despite this, the wine is still very light on its feet, and is a delicious alternative to Prosecco as an aperitif. 

Pair with citrus-dressed raw fish, bruschetta, or soft cheese.
