Vin de Paille translates literally to ‘straw wine’. The ‘paille’ refers to the ancient method of drying the grapes in boxes lined with straw.

Ganevat's rendition is made with Savagnin, Chardonnay and Ploussard, left to dry on straw mats as per tradition, gently pressed and aged in barrel for three years.

Very well-balanced, there are concentrated dried cherries and figs, stewed prunes, and a touch of salty brininess on the finish.
