Billy's top three wines at the moment are:
60% Carignan and 40% Aramon carbonic macerated for 5 days, then aged in a neutral fibreglass vat. This one is nice slightly chilled, it's fruity and bright yet rich and complex.
A blend of MV6 and 777 clones macerated for 10-14 days, matured 8 months in aged French oak, then in bottle for 16 months. It's got elegant fruit, gentle mineral qualities, fresh and silky mouthfeel, very yum.
Dry-grown Shiraz, destemmed and left on skins for weeks, aged in barrel for 10 months. Dark fruits, full body, satiny and a little spicy.
