This is for batch #3 of 'Summer Flowers' - the latest release from Dave's Saison Vermouth project. It's made from an organic Muscat base, then using a mix of marigold, calendula, elderflower, chamomile, wormwood, apricots and peaches from a biodynamic farm on Mornington Peninsula.
Beautifully balanced, with a little hint of sweetness, this is the perfect delight to see out the last little bit of summer. It's incredibly flavoursome but still light and refreshing enough to drink on its own. Best with one large ice cube in a glass, we reckon!

Saison was conceived from the idea that new Australian vermouth could be focused on fresher, seasonal, singular ingredient led flavour profiles rather than the traditional heavily spice and caramel driven palette of many European producers. Dave’s extensive culinary background gives him a unique skillset when it comes to building vibrant layers of flavour, and a fresh set of eyes on how those flavours are presented. Those who have tried his food across Embla, Lesa, Town Mouse, Matterhorn, will know just how clever his palate is and how unique his pairings can be too.
Saison vermouths are now sold with a nice removable-reusable wooden lid, and will keep for several weeks once opened without losing freshness. Store refrigerated.
