2019 Amoise Cabernet Franc
Grapes: certified BioGro organic Cabernet Franc.
Hand-picked on April 9th, 2019.
Origin: William Murdoch vineyard, Gimblett
Gravels, Hawke’s Bay.
Soils: free draining, Alluvial gravel deposits with
greywacke and silt layers.
Winemaking: indigenous vineyard yeasts, destemmed (whole berry, uncrushed). One third carbonic maceration for 17 days, balance traditional pigeage (foot plunge) once daily until completion. Both ferments were joined together and basket pressed after 33 days maceration.
No additions were done at any stage, including SO2. Unfiltered, unfined.
