Is it a rosé or an orange wine? Lovers of Patrick Sullivan 'Breakfast Wine' or Jauma 'Why Try So Hard?' rejoice! This is Halcyon Days' blend of skin-contact Chardonnay and rosé of Pinot Noir....
From the winemakers:
Heliacal Rise is our orange/rose wine. All fruit in the wine came from the certified organic vineyard in Mangatahi.
The Pinot Noir portion of the wine was our first harvest pick of 2021 and we brought that into the winery in early-February!
After a good day’s handpick, we came to the winery and pressed the Pinot Noir as whole bunches (which tends to give a softer mouthfeel in the resulting wine and also gives less colour) as soon as it arrived.
The muscat Chardonnay came in towards the end of February. Again handpicked on a glorious Hawke’s Bay day, this was brought into the winery and partially destemmed (the majority went into the fermenter as whole bunches).
The Chardonnay got a gentle hand plunge only when needed throughout ferment (although Olly likes to give a foot-plunge to skins tanks at the start of ferment) and was pressed off skins after two weeks.
With both wines then in the tank, we could begin the wait for malolactic fermentation to complete. This normally happens as the weather warms up in spring but, unusually, both batches went through malolactic fermentation through the autumn-winter period.
Once blended, there was little to do but bottle it and give it a bit of time to settle.
Blend: 38% Chardonnay (809 or Muscat clone) fermented on skins and 62% Pinot Noir (115 clone) whole-bunch pressed and fermented as rose. The two were blended in the winter, just after they had gone through malolactic fermentation.

Halcyon Days wine is made with organic grapes from Biogro certified vineyards. The grapes are handpicked, naturally fermented, and bottled unfined, unfiltered, with no additions. We use time honoured methods to create striking wines that are a dynamic expression of Halcyon’s place: Heretaunga/Hawke’s Bay.
