Forget that excessively cloudy fizz you commonly associate with pét nats or méthode ancestrales... this pet nat is a class act from Burgundy!

Ecume is made from Aligoté (a lesser-known, high-acidity white grape variety from Burgundy), and direct-pressed Gamay Noir (normally a red grape varierty most commonly found in Beaujolais).  It's equal parts dry, fresh and fruitful. 

NB: The wine is under a cork which is then under a crown seal. Pop the top, then use your corkscrew!
