Nikau Farm is Dane and Hannah Johns' of Momento Mori very own estate-grown, handcrafted and bottled wines from their family vineyard in Gippsland, Victoria, Australia. These wines have significantly more time, labour and dedication put into them, such that it would not be fair to group them together under the one Momento Mori label. 2020 Tonimbuk ‘Amphora Granite’ - a cuvée (blend) comprised of Pinot Grigio (2 Italian clones), Pinot Gris (A French clone) a handful of Chardonnay and 5 single rows of Sauvignon Blanc farmed by us at the Tonimbuk site.
Being grown on coarse, weathered granite soils gives this wine a lean and mineral driven nature. Co-Fermentation took place in stainless steel with whole bunch skin-contact for approx 6 weeks. The wine was then transferred by gravity to one 600L Amphora for roughly 1 year.
It was then bottled by hand and has spent approximately another 6 months in bottle before release. This is an orange wine but with a very refined and elegant feel to it.
It has great structure and drive which I believe come from the Granitic soils. The time in amphora has given it another layer of complexity and while it is a varietal blend, being from the same vineyard, and in fact the same part of the vineyard it has a very cohesive feel to it. Wild ferment, No SO2, No pumps, No adds, No oak.
