Pinot Noir from the 'Cathedral' vineyard which is in Upper Goulburn, two hours drive North of Bill and Patrick's main vineyards in Baw Baw Shire, Gippsland, Victoria. Bill has been working with this site for 3 years now, first making rosé until he understood the site better.
From dry grown, organically farmed 20 year old vines planted on deep, red volcanic soils, this wine is fermented and matured in a combination of stainless steel and old French oak. It's complex in structure; enticing on the nose, lively on the palate and incredibly easy to drink.
