2018 Momento Mori Three Pack
The Momento Mori 3 pack contains:
Bianco - Blend of approximate 40% Fiano, 40% Greco di Tufo and 20% co-fermented Fiano and Chardonnay. Each portion fermented separately in stainless steel using various fermentation techniques and with 1-9 months of skin contact. 18 months aging on lees before blending and bottling.
Etcetera Etcetera - a 14-varietal, continuous ferment of all things white and red as harvested by Dane. As each variety is harvested and brought into the winery a portion is put aside into a seperate fermenter, added to with each day. It's approximately 50-50 in terms of white varieties and red varieties, but ultimately as a wine it is a dark rosé/light red in colour. Savoury, fresh, energetic and complex.
The Incline - 95% Syrah 5% Nosiola, grown organically by the Chalmers family in North Heathcote on Ironstone, Dolerite and Basalt soils. Hand harvested, co-fermented. Deep, dark, blue fruits but with the lightness of touch and freshness you can expect from Dane's wines.
