Organically farmed Sauvignon Blanc from 25yo dry-grown vines, planted on schist soils over sandstone. Half was kept as whole bunches, the rest was destemmed, then combined and left on skins for four days before being drained and pressed into large format French oak for a slow fermentation over winter. This is a ripe style of Sauvignon Blanc, more stonefruit spectrum than green and grassy, but super steely and mineral too. Incredibly clean and pure.
