From Antoine’s three vineyards across Varrains, Chacé and St Cyr-en-Bourg, which total 4 hectares, were all planted in 1985 and for the most part are on limestone, clay and sand on limestone bedrock.
Organically farmed, hand harvested into crates and then sorted. The fruit is destemmed (as tradition dictates), then fermented and matured in concrete for a total of 9 months (30 day maceration before being pressed).
Unfiltered, unfined, SO2 added at bottling (26mg/L).
