Cormé is its very own beverage - essentially a 15th century cider made from Corms.
What are corms you ask? We had to google this one too! Corms are fruit from Sorbus Domestica, or Service Trees.
An incredibly unique fruit, Cormé tastes much like Poiré Granit (Eric's top pear cider from 300yo trees), but is more dry, more mineralic, and more slatey. It is an incredible drop, a very rare one too, and is for us, Eric's top sparkling wine.
New Zealand's allocation for the year was just 12 bottles of 2017 and 2020 Cormé. This is produced in such small volumes it is only released in 500ml bottles too.
