2011 Philippe Bornard Vin Jaune
Based in a quant little farming village called Pupillin in the Jura region (East of Burgundy, near the Swiss border), Philippe inherited the land from his father some thirty years ago. Story goes it was natural winemaking legend Pierre Overnoy who persuaded Philippe to produce his own wines rather than sell to the local co-op. Philippe's wines cover two appellations, Côtes du Jura and Arbois Pupillin (where his home and winery is), and he has been certified Biodynamic since 2012 (but practicing organics since the 90’s).
Their Vin Jaune is a story in itself - see here - 100% Savagnin from Philippe's home vineyard in Pupillin which sees a minimum of 6 years and 3 months under a yeast flor 'veil'. The resulting wine is incredibly intense, beautiful and pure. A incredible match with the region's cheese, Comté!
