Certified organic Riesling. Machine harvest as there was no access to hand picking teams in ’20 due to covid. Must spent 7 days in 400L bins uncovered and undisturbed outside in the cold. Pressed to stainless steel. Fermented dry over 17 days. Racked to Puncheon for 1 year then racked to stainless steel for 6 months. Bottled February ’22 with no additions.
