Dan’s top three wines at the moment are:
Chenin Blanc with true concentration and power! Grapefruit, pith, lemon, lime, orange blossom, chamomile. It's steely, mineral, and cooling on the palate too. No overt aromatics, green apple or lack of acidity here...
There are many links in the chain of how this wine come to be. Long story short; collab between some cool kids in the South of France and Burgundy natural wine pioneer Dominique Derain. Light, ethereal, complex. Layers and layers of detail and it seems to evolve incredibly over an hour or two - if it'll last that long!
The middleweight of the Chandellier trio, Ribieral is Grenache and Carignan from the South of France. Deep, dark and perfumed but with enough acidity and freshness to keep you reaching for that next glass. Brambly, graphite-y, lively.
