The Macabeu vines used for this wine are planted on calcareous-clay soils which are grown organically.
The grapes are hand-harvested and then destemmed. A portion of the stems is then added back during the pressing to lend more texture. Wild fermentation (with native yeast), left to rest for 6 months on fine lees in stainless steel tanks. Bottled unfiltered, unfined and with no added sulphites.
The wine has a light orange hue from its slow, gentle pressing. It is fine, delicate and chalky.
