Organic Pinot Gris from Kaimira vineyard in Brightwater. Stoney, alluvial riverbed soils. Fruit is hand harvested, foot-stomped in bins, then half is pressed off after 12 hours and the other half after 24 hours on skins. Fermented in a combination of stainless steel and old French barriques. Kept on gross lees until bottling with no fining or filtration and just minimal sulphites. This wine has the most beautiful rose gold-copper hue from its short time on skins, fine talcy tannins and is in a great place after some time in the cellar.
