100% Sauvignon Blanc from Waipara, North Canterbury. A luscious, richer, more textural style of Sauvignon more in line with Valmont's French ownership and heritage than what we have seen from New Zealand.
BioGro certified organic fruit grown on alluvial gravels over sedimentary clay soils. Hand harvested, whole bunch pressed and wild fermented in old French oak barriques. Bottled unfiltered and unfined, with just 15 mg/L SO2 at bottling.
Valmont was a partnership between French couple Jean-Yves Domont and Sophie Valacant, later joined by James Opie. Jean-Yves has worked as winemaker back home in France for a number of renowned producers, most notably Matthieu Barret (Domaine du Coulet, Cornas, Rhône) and Yvon Métras (Beaujolais). Sadly this was their last year in New Zealand before home returning to France.
