Organically farmed Pinot Noir from a single limestone rich vineyard. 100% whole bunch for 2 weeks then half de-stemmed by hand. Must left for 1 week then whole bunch and must pressed to stainless steel. Fermented dry over 15 days. Racked to puncheon for 1 year then racked to stainless steel for 6 months. Bottled February ’22 with no additions.
