Haggis is a wine that doesn't fit any category, no description will ever do it justice, you simply have to take the plunge and find it out for yourself. It's a white, orange, red blend with just about everything Patrick grows thrown into it, tasted, blended, then tasted again, then probably blended some more. Either way, drinking the wine will instil a confidence in Patrick's palate and his ability to make something delicious and you will never again ask about it, you'll simply reach for another bottle.
All vineyards farmed by Patrick Sullivan (and William Downie) are farmed biodynamically (in process of certification), all vines are cane pruned, there is no tillage on any soil, all vineyards are on volcanic soils, and all vineyards are dry grown.
If you really must know: Sauvignon Blanc, Pinot Gris, Pinot Noir, Viognier, Gewürztraminer!
