2019 Chardonnay is from 30 year old vines from Patrick's Bull Swamp vineyard.
The 2019 is a blend of the I clone portion of chardonnay planted on the southern slope at the Bull Swamp Vineyard. Whole bunch pressed into a new 2000 litre oval vat. Fermentation takes place over 10 days with full malolactic taking place immediately post-primary fermentation. The wine shows plush stone fruit, a rich structure and a savoury persistence, High acid and defined texture.
All vineyards farmed by Patrick Sullivan (and William Downie) are farmed biodynamically (in process of certification), all vines are cane pruned, there is no tillage on any soil, all vineyards are on volcanic soils, and all vineyards are dry grown.
