Our introduction to Ephemera wines came from when Rhen Dodd was working as assistant to Gary Mills at Jamsheed. He's since started his own label with partner Jannelle de Gabriele, working out of Yarra Valley with the majority of their fruit sourced from the organic Chalmer's Vineyard in Heathcote, North Victoria.
Sangiovese, the red variety most commonly found in Chianti (Tuscany), but made into an incredibly light and fruity style that suits a slight chill.
Approximately 50% whole bunches, 50% destemmed fruit which was harvested then left in a fermenter for 7 days for partial carbonic maceration. Pressed into large format old French oak and bottled unfiltered, unfined, and with just a small amount of sulphites added at bottling.
NB: All Ephemera 2018 wines are under crown seal (but are still wines, not sparkling).
